
ALI’s BANANA BREAD
(gluten free, high protein)
So many mums I see LOVE and almost rely on banana bread to get them through both pregnancy and early motherhood!
Here is a recipe I created to meet the need without the guilt…
- 2 ripe bananas
- 1/3 cup almond meal (or rice flour)
- 2/3 cup pea protein powder ( I use vanilla protein – smooth, delicious and low carb)
- 3 tspn cinnamon powder
- ¼ cup raw honey
- Handful chopped dates
- 3 tbsp. natural yoghurt
- 2 tbsp. coconut butter
- 1/3 cup boiling water
- (you can add a handful of crushed walnuts or shredded coconut for extra flavour/texture)
Method:
We are all busy, so I am pretty laid back with my measuring, but these are the rough quantities!
Mash the ripe bananas in a bowl. Add all other ingredients, then pour boiling water over coconut butter to melt.
Stir well to combine.
Spoon ingredients into a greased loaf tin.
Bake at 180’ for approx. 35-40min. Check at 30min – it should be browning and firm on top, and a knife into the centre should draw out clean.
Remove from oven and leave to rest. Enjoy by itself or served warm with some natural yoghurt and blueberries. Yum!
